Shepherd’s Pie

Perhaps one of my all time comfort foods, especially as it gets chilly outside, is Shepherd’s Pie. As winter approaches, this dish invariably finds itself on the menu rotation in our household. Hands down this is one of our family favorites. The best part is that the leftovers somehow taste better the next day. Although there are a few additional steps to making this dish, it is still easy and you can plan ahead. What I love about this dish is that it combines sides of vegetables, starches, and protein into one bite of deliciousness. Vegetarians may substitute ground up impossible meat.

Pro tip- Rinsing the potatoes before and after cooking removes surface starch, ensuring the mash is not gummy. Adding red wine and tomato paste when cooking the onions and garlic adds to its depth.
