Bubble and Squeak

For many years now, we have been meatless on Mondays. As such, besides Indian food, vegetarian options have been somewhat limited. So every once in a while, leftover mashed potatoes are cooked with onions, cabbage, and peas (rarely carrots) with a hearty cheese topping. Years later, while visiting London, I figured out my mother had simply borrowed the Bubble and Squeak recipe from the British sans meat. Typically Mom serves a big salad and then hearty servings of this dish on Mondays. During my last visit to England, I realized the British people typically consume this on Sunday breakfast or brunch with leftovers from the weekend. A fried egg may be placed on the pan before serving. Despite its namesake, I have strained my ears to hear the bubble and squeak and I must confess the sounds of the onions, cabbage, and peas cooking with the mashed potatoes do make the steam bubble up to the lid and pop ever so often.
