Bagels and Lox

Once a month when I have slept late on Saturday night- typically after having binge watched a series on Nextflix- I get up late on Sunday morning. Having missed breakfast, this brunch item never disappoints. Get fresh bagels and chop some scallions (spring onions). Boil one egg (hard boiled 12-15 min) and then peel and chop. Finely chop one cucumber and red onion. Toast the bagel and spread some cream cheese on both halves. Assemble the bagel by placing the lox on one side, layering with cucumbers, red onions, chopped eggs, and capers. Garnish with fresh dill. I hope you try this New York staple. I assure you it will leave you wanting for more. As they say in New York, Mangia Mangia.
